+325 means you're betting 100 to win 325. The + means that the situation is unlikely.

-325 would mean you're betting 325 to win 100. The - means that the situation is going to happen more than not.

+x The amount you'll win if you bet $100
-x The amount you'll have to bet in order to win $100

the "-" numbers are how much you put up to win 100
the "+" numbers are how much you win if you put up 100.
You always get your money back if you win. So if you bet $100 on a +300 bet, you collect $400. If you bet $900 on a -900, you collect $1000.
