Both sites work essentially the same. Try both and see which one you prefer. Personally I prefer Circle... it's had a slightly better rate, there are no sell limits, and it arrives in my bank about a day faster than Coinbase.
Honestly, if Bovada does it correctly it should be tough for your exchange to know where the bitcoin came from.
That would mean Bovada uses newly purchased bitcoin from an exchange, never re-uses bitcoin addresses, and never groups the bitcoin they have in to one address.
But, you should still pass through a new address in your own wallet anyways for better protection and privacy. Especially since we don't know Bovada's system yet.

Yeah, that can happen whether they think it's gambling or not.
If you open a new account and then start selling a bunch of bitcoin on it they might be required by law to ask for info on what you're doing. Obviously if you say poker they will close your account.

In all of the reports I've seen of people having their account closed they will still allow you to withdraw your bitcoin balance. So they won't take your money, but you'll have to find a new way to sell.
