Generally poker sites don't ask for a lot of ID when players first sign on because it would be very difficult for them to build up any kind of player base if players had to jump through a lot of hoops to start playing. It's just a reality of the online poker business.
As intimidating as their statement that their decision is final is, that doesn't mean that they are actually finished with your case. Many other players have gotten similar notices only to later receive a notice that their funds will be returned to them. Most of the time if PokerStars doesn't have victims to distribute the money to, the original player does in fact end up receiving his money in full. So don't get too worried yet.
I also think that it's really important for you not to say that they are stealing from you etc. That will just make it that much harder for you to get the resolution that you want.
