Simple question, is there an optimal card to pick if you're betting against someone and get paid if it hits the flop?

Example I have 6's and he has J's

Flop is 863 I get paid

Or is it just neutral gambling?

Generally speaking, since players play more hands with high cards than low cards, deals that see a flop contain more high cards in players' hole cards, and consequently more low cards on the flop. (I am sure that you are aware of this.)

Spadebidder did an entire series on his website years ago investigating the size of various card removal effects. Here is the link to his "flop rank bias" analysis.

Who gets paid if the flop is J63?

If it's a split, it doesn't matter what rank you choose. You're just gambling.

But if the higher pair gets paid, then choose the highest possible rank (aces), so that if both ranks are present on the flop, your higher pair will win.

If you are talking about flop + turn, than 5 and 10 are your best options, since every straight contain 5 or 10.
