The bookies are going 1/2 female and 13/8 male despite public statements that the gender is unknown.

Obviously the bookies have had a large volume of bets on female and have concluded that some people might know the gender.

What kind of model could be used to assess if betting male is profitable?

There is no model for a book that's been shifted due to insider trading.
