Hit n Runners in the long run similar to dice?

I've seen many "hit n runners" sitting at tables waiting for opponents. Mainly what they do is either steal a blind and run, win a pot and run, etc. But the main thing is they try to book a win within 20 hands or 5 minutes of play and leave. And they do this repeatedly day after day or hour after hour.
Now assuming your skill is greater than the hit n runner. in the long run, arent you more plus EV then this guy, even tho he is booking a lot more wins than you?
So isn't this similar to dice, where you can play at 90% and win 15 in a row and then lose a few and lose all the profits?

I think he's more likely to quickly get down a little than quickly win. In the long run those series of tiny sessions should be the same as one full session if he's recognized / if others have tracking software.

my question is... can one manage to do better by doing hit n runs vs just playing regular sessions ie longer than 1 hr or 100 hands
