How to make an entertaining interactive stream?

I have been streaming close to 100% of my play on twitch now for around three weeks and my intention was and still is to hopefully build a very friendly community around the stream.
We now have a nice little band of regular contributors but sometimes, when there aren't too many regular chatroom users watching the stream I find it difficult to stimulate chatroom activity.
I have found that when the chatroom is busier, new viewers tend to stick around for much longer and then begin to contribute, so activity in the chat definitely has a snowball effect on the number of viewers I get, I just would like to get a better feel for what people want from a stream in general.
When there isn't much chatroom activity, I'm just commentating on the action at the tables. This is fine but it doesn't make for a particularly interesting stream, I much prefer it when I am interacting with people in chat and then breaking from that to discuss any interesting spots.
So, if you were watching a stream of some guy playing 2 tables of microstakes speed poker, what would encourage you to stick around and get involved? What could/should he do to make the stream as interesting as possible without doing things that may eat into his winrate?
