It took me a while to let go of the idea of "but it's not REAL poker!" when structuring these events (ie, declaring the chip leaders as the winners after a fixed time), but when it's a crowd of casual players and girlfriends, an hour or so of poker is all they want, and nobody cares.
The people who make jokes about the format... you talk to those people about joining the all-night cash game in the off-campus apartment one of you has.
