This is how I'd do it. Keep it simple, as few denominations on the table as possible. Dealer antes somewhere between one small bet and one big bet, depending on what kind of influence you want it to have on the game (bigger ante means bigger variance, smaller ante favors tight play).
If you're doing $0.25/$0.50 or $0.50/$1 limits, you might want to keep it to $0.25 and $5 chips, if your quarters can support it. Get all the quarters out there and when you run out, do rebuys with $5 chips—which is conveniently one stack of quarters.
