Yeppers. Definitely skip any denomination that's only twice the previous denomination. No need for that stuff.
Your game will probably only use up to the $25 chips, if it plays big enough or you're light on $5 chips. But everyone seems to love having some $100 chips handy.
Only one thing left to address: How many of each? For a $1/$1 game that plays in the low hundreds, assuming one table, you can probably manage with this breakdown:
$1 × 100 = $100
$5 × 300 = $2,000
$25 × 100 = $2,500
$100 × 100 = $10,000
You can probably dial back on the $100 chips, but I like to have everything in increments of 100 because I'm nitpicky like that.
You also can't go wrong with more $5 chips, especially if you expect to ever have more than one table, or the game will sometimes play much bigger. It won't kill you to have more $1 chips, but in my experience, more than one rack of blind chips just isn't necessary.
