If he's passive and slowplays the nuts on 3rd a lot, and is straightforward on later streets you can b/f here sometimes.

I play live mix games and in this setting random fish tend to be too loose on early streets but paradoxically too tight on the river. Are online fish different?

Because he will (correctly) call with a jack, which makes up ~40% of his hands. Also rivered Ts, 9s, 8s. Check only if you intend to c/f. Turning this into a bluff catcher with a c/c would be absurdly bad..

Whether villain will x/c 7th UI (with a jack) is by far the biggest factor in determining the correct play here, and since his equity is just barely enough to make calling not be absurdly bad I expect even good players will have a wide variety of call down %ages, let alone the fish.
"standard" is a subjective term ldo, but be careful confusing it for "optimal" or "correct". I have seen many "standard" razz plays look absurd after closer investigation, just as many standard NLHE plays from 2006 would seem absurd today.
