So today I made banana chocolate chip bread. Despite the label of "bread", there's no yeast in this; it's kind of a sweet, cakey, breakfast type deal. That's pretty much when my family and I traditionally ate this, for breakfast. It's good heated or cold, with or without butter (I prefer it cold with butter).
The recipe
Ingredients:
1/3 cup shortening
1/2 cup sugar
2 eggs
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
1 3/4 cups flour
1 cup mashed bananas
1 cup chocolate chips
Recipe:
Cream shortening and sugar; add eggs and beat well. Sift together dry ingredients; add to creamed mixture alternately with banana, blending well after each addition. Stir in chocolate chips. Pour into greased bread pan, bake at 350 degrees 50-60 minutes (bread is done when the center is no longer mushy looking and a toothpick inserted in the center comes out clean and dry). Makes one loaf.
