I'd be more than happy to escrow if everyone finds me suitable, although I'm not playing poker online right now so we'd have to use something else like Amazon Marketplace in order to do money transfers.
I have a couple of transactions in the marketplace, purchasing of shares for various tournaments, and used to be staked by someone on 2p2, all above board.
I think Paypal is standard nowadays as well since site transfers aren't really a good option anymore.
I think 2p2 officially frowns on PayPal since you can reverse the charges for some time, but if you send the money as a "gift" I think that negates that option.
I have a PayPal and Amazon marketplace account - either would be fine by me for a fantasy football league.
