It does still happen if no one stabs them in the brain. It happened with Spencer earlier in the season (the guy who got his guts ripped out by Negan). They just don't make a point of explicitly showing it anymore because it's understood. Morgan did start to stab Richard through the brain while the others were leaving. And after Benjamin dies, when the sheet is over his body you can see blood from a stab wound where his head is.
As for why no one's been done in by a walker for awhile, the first paragraph of Punker's post above explains it very well: if you've survived for this long, chances are you know how to deal with a walker, or at least know to stay the hell away from them and not make noises that will attract them.
