Yeah, bibimbap is basically korean fried rice (in that it's a dish typically made with leftovers). I don't think somebody could get away with doing fried rice. That's def a spot where the fact that korean food isn't very ubiquitous plays a big part.
While I agree with the opinion that Korean food isn't very ubiquitous, I also think that there is a very strong cultural bias to dishes from certain nationalities.
For example, Risotto and Paella is seen as being more skillful than fried rice when I'm not sure that is the case.
