Anyone using anything else than HEM2 for ZOOM on stars ? Seems to be really weak sauce bad to me. Tilt me more than it's helping tbh

do you have a higher end one? they make like 10 different models, i got a middle of the line one and really dont like how it cooks steaks, been searing them in a pan then baking them instead

no. just max power the whole way. Sears the surface just fine. Takes like 5 minutes for it to get that hot... but once it gets there, steak sizzles.

Eh…
IMO, sous-vide rib steak at 50-55°C for 6 hours, then sear/char real hard and real brief at 500-1000°C. Pack the steak in salt and let sit before sous-vide for best results.
