Not sure what to do here. Any ideas on how white can improve his position?

I'm a beginner too. But my guess would be Qe3.

dxc6 has a pretty long list of benefits.

White is fully developed and castled, while black is not developed, not castled and has lots of weaknesses. Really, any active plan by white should lead to an advantage. Avoid queen trade and start opening up lines.

dxc6 followed by Nb5 to target the weak d6 pawn is a simple plan that looks good.

Preparing f4 to open up the center is another idea that would probably pay off.

This hadn't occurred to me at first bc I don't like to trade a center pawn, but I see it makes my white bishop more useful, lets the rook control the d file, and the knight now can think about occupying the d5 square.

And more to thepoint Nb5.
Open up the dfile so the rook attacks the pawns on d6

Look what protects the knight at f6 and look what orotects the c7 sqyare and the d6 pawn, same queen which means overload.
