This isn't quite right, Occam's razor tells us that the explination that forces us to account for the least number of unknowns is most likely to be true.

What you've described here is the coloquial understanding, but its misleading. If something is complex, but we can account for everything about it, it would satisfy occam's razor better then a less complex answer in which we have to make more assumptions.

This is one of my favorite ideas in debates in general. Being able to pass the Turing test seems like a basic feature of understanding the debate in the first place.
