sumo wrestler, obviously. nfl lineman vs top sumo would be interesting, if anybody could name one nfl lineman

Wikipedia is telling me they are called rikishi. Interesting. I know karate practitioners are called karateka, and judo practitioners are judoka, so I don't get why sumo practitioners aren't called sumokas.

An alternate term people use is "sumotori," which is maybe closer to what you're thinking of.

Really sumo is more of a sport than a martial art like judo or karate, although certainly competitive judo/karate is a thing.
