I see no reason to 3-bet this small with AK specifically considering live players tend to put everyone on AK and will thus play perfectly vs the specific hand.
I have to disagree with one of your points here. Most terrible live players who don't understand ranges (most of them), puts everyone on AK when there isn't an Ace or a King on the board so they can justify calling with whatever. When there is an Ace or a King, their read suddenly becomes a small pocket pair or KQ, AJ, etc.
However, that being said, the Villain in this situation seems to play a lot bigger, 10/20, 25/50 and above. Hero had also implicated Villain is a pro/regular/winner in the bigger games, otherwise in the op it would have said something like "AK 300 bb vs huge mega donkey whale donkeying off money before big game". Because of that I'll assume the Villain isn't terrible and putting people on AK every hand or small PPs.
That being said I think Villain sees Hero as weak, whether his hand is weak or his ability to play against aggression. I think PF might have been a little bit too small, which will either be perceived as a weak hand or a strong hand that isn't willing to put much money into the pot, especially with the subsequent river min raising wars. That being said, Villain may have
leveled himself into thinking he can get Hero to lay down KX because his preflop and flop raise showed weakness, or he can get Hero to lay down AK/AA because his preflop raise/flop raise showed he didn't want to play a big pot. Key word there is "leveled" himself into believing it.
That being said I don't see how I can ever fold AK on that board in a 3bet pot, especially because it's so easy for him to have the same hand here.
This is making me think a lot because IMO your hand is pretty face up, you are basically telling Villain you have AK/AA amirite? If that's the case I don't see any reason for him to lead the turn with a stronger hand than AK and he should definitely expect you to bet the turn or shove if he checks (right?) because of stack sizes. He also shows down the same hand a good amount of times. I'd really be more worried about a check raise on the turn.
