Right now i see all my total played hands on my hud, on all the tables that i play on.
How can i change (back) to only viewing the hands that i have played on the tables that i play right at the moment.

The HUD should only ever show you your own session stats, not totals. The only time we tend to see totals for you is when PT3 doesn't know that you are the "hero", and that normally indicates hand history files written by a handgrabber or something where you are not shown differently.

Please enable logging, restart PT3 and play about 20 hands at a single table and report your problem. Attach the hand history file for the session and a screenshot of the table along with your PokerTracker.log and PokerTrackerHUD.log files.
