Sage was best meal I've had in Vegas. Been to Picasso and è previously. Whole experience was great.
Sazerac to start
Oyster amuse - flavor bomb. There was a pickled element in there with some heat from the sauce. Short list for best oyster ever.
Salmon crudo. Salmon was perfect, fishy but not fishy, preparation was with some caper/onion lox type flavors. Very tasty.
Foie gras with a blueberry compote and some toasts. Predictably very good, I'd say this was the standout of the meal. Sweet, salty, savory elements were right on point.
Missed a picture of the langoustine bisque. Very good, you'll just have to trust me.
Ribeye cap. Sauce was strong on cilantro, the green pieces you see are snap peas. This one took a bit to grow on me, but by the end I really liked it.
Strawberry rhubarb something. Nice take, the "ice cream" was something in the way of foam without being obnoxious. Cool texture.
Old forrester birthday bourbon on the back end. Because, why not?
The one element that was lacking was wine options. There was no menu wine pairing with the chefs tasting menu. We asked for pairing options, and were told that it would consist of the sommelier's suggestions from options on the by the glass menu. We went with that. Half glass pours for each course. All the wines were good, but in one or two instances the actual pairing didn't seem to work real well. No big complaints really, but would have made the meal even more of a home run with a good wine pairing.
At the end, total was right at $400 before tip. Would gladly pay that price for that meal again.
Sage took about 2.5hrs. After that, went back out to the craps table and made another run in for $700. At one point ran it up into about $2500, but then hit the run good wall and ended up chunking it back. Out for $0, checked out back to the room at about 145am. The -$2,000 or so between the last 3 craps runs sucks, but still up for the trip and night was def a success based on dinner alone.
Just getting up and around. Flight leaves at about noon. If anything particularly interesting happens I'll throw it in the end, but otherwise probably signing off here.
I haven't done a count yet, but my rough math has me up about $2,400 from gambling. Mirage run yesterday was was great. Didn't give a bunch of details, but I, my buddy and another guy all had solid rolls. Hit the smalls once and talls once each for $15 on the 30x. Each of those times got within one number of the full bonus bet (damn you 9 and 5!!). Anyway, end tangent, we've charged pretty much all meals and drinks back to the room so, after accounting for that, I'd say I'm still up somewhere a bit over $1,000 after all expenses.
It's been fun.
